9 Ice Cream Recipes that Will Keep You Cool This Summer

Summer is in full swing, and to me there is nothing more essential to a good summer than big bowls full of homemade ice cream. There is something magical about the creamy delicious goodness of a frozen treat that you have prepared yourself. Store-bought just can not compare. Plus if you make your own ice cream, there are so many more interesting and even healthy recipe variations than you will find in the supermarket aisle. I also know some people are intimidated by ice cream, so all of the following ice cream recipes are delicious and creative but also easy to make at home. Most of them don’t even require an ice cream maker!

1. Circus Animal No-Churn Ice Cream

From Sugar Hero

Circus animal ice cream is like being 8 years old again in the best possible way. This ice cream is gorgeous with pretty pink and white swirls and sprinkles. It is also creamy and sweet and perfect for a summer tea party. And it is no-churn, so you can simply mix it up and pop it into the freezer- no fancy equipment required.

2. No Churn Dulce de Leche Ice Cream

From Onion Rings and Things

Dulce de leche is a South American caramelized milk. It reminds me of a cross between salted caramel sauce and sweetened condensed milk. In any case, I do not even understand how it is possible to make something this delicious with only two ingredients. This recipe is so simple and yet so sinfully rich and creamy. Try sprinkling it with sea salt for a finishing touch.

3. Chocolate Chocolate-Chunk Raspberry Swirl Ice Cream

From Saving Room for Dessert

Every list of ice cream recipes needs at least one chocolate one, and I choose this one. A tart raspberry swirl sets off the dark chocolaty ice cream very nicely. This one requires a little more work and it does use an ice cream maker, but it is worth the effort. Top it with fudge and fresh raspberries.

4. Harry Potter Butter beer Ice Cream

From Princess Pinky Girl

Inspired by the bestselling books, this ice cream is delicious even if you have never even heard of Harry Potter. Butter and brown sugar give a creamy butterscotch flavor, and it is also easy to make without an ice cream maker.

5. Cotton Candy Ice Cream

From Homemade Hooplah

Summer and cotton candy are a match made in heaven. Ice cream and cotton candy together are just perfect. This ice cream is sweet and fun and reminiscent of beach days on the boardwalk.

6. Two-Ingredient Watermelon Ice Cream

From Slender Kitchen

This one is kind of a cross between ice cream and sorbet, but it is refreshing and summery and actually healthy. Plus, it only requires two ingredients and you do not have to wait as long as traditional ice cream for it to freeze up.

7. Toasted Marshmallow Ice Cream

From A Happy Food Dance

This ice cream drums up memories of sitting around a campfire telling scary stories. Top it with graham cracker crumbs and a chocolate sauce for the full effect. Also this one is no-churn!

8. Mango Ice Cream

From Kawaling Pinoy

Ice cream with a strong mango flavor, made with only three ingredients and without an ice cream machine! The flavor is tropical and sweet. Try topping it with spicy chili powder or fresh fruit.

9. No-Churn Mojito Ice Cream

From Charlotte’s Lively Kitchen

Filled with the flavors of rum, lime and mint from the favorite cocktail, this ice cream is refreshing and cool and light- perfect for a hot day. Try it as a palate cleanser after dinner, or sitting in the shade by the pool!
